Are ya in a time crunch and only have 10 minutes to cook?!

Yeah thats me a few times a week, I LOVE cooking but sometimes I just do not have the time.

This recipe takes only 10 minutes and is full of healthy carbs, fat, protein and loads of veggies! The perfect balance in my opinion.

You guys have seen me talk about ‘Banza’ pasta, It’s absolutely my favorite, it’s made with chickpeas! If you haven’t caught on by now I love anything with chickpeas (hence my blog name). Not only does it have my favorite legume in it it is also FULL of protein, which I absolutely love because a lot of people do not get enough protein in their diet. As a person who active works out 4-5 times a week I NEED all the protein I can get.

Another ingredient people may not be familiar with is ghee! If you do not know what the magical substance is let me tell you about it: Ghee is a clarified butter that has been simmered and removed of any excess water. Also in the clarifying process it removes casein and lactose which makes it great for people sensitive to dairy. (raises hand) It’s high in omega-3s, anti inflammatory and helps with digestion.

Anywho, Let’s get to the recipe shall we?

Ingredients:

  • 1 box ‘Banza’ bowtie pasta (or any pasta of choice)

  • 2 tbs ghee

  • 2 tsp adobo seasoning (I used the brand simply organic)

  • 1 zucchini

  • 1 red bell pepper

  • 5 white or cremini mushrooms

Instructions:

  1. Start by bringing water to a boil and cook per directions on the box. (mine boils for 7 minutes) Once pasta is done drain and set aside.

  2. While boiling your pasta cut up your mushroom, zucchini and bell pepper. Cut the zucchini into rounds then again in half. For the bell pepper dice into bite size pieces. Next, slice the mushrooms to thin pieces.

  3. Measure out 1 tbs of your ghee and put into a pan on medium heat (we will use the other tbs for the finished pasta). Once warmed toss in all cut vegetables and cook until soft (about 6 minutes)

  4. Once the pasta and the vegetables are fully cooked toss together with remaining tbs of ghee and 2 tsp adobo seasoning. Toss until ghee is fully melted and incorporated and all pasta is covered in adobo to your liking. ENJOY!
