Chicken Sausage and Kale Soup (vegan option below)

Oh heyyyy friends guess whos back! ME.

I took a minute off of posting recipes just simply because I wasn’t feeling inspired which is totally okay. I’ve been a bit more inspired though lately to create some cozy fall recipes. I LOVE FALL and I love all things cozy so heres to the first fall inspired recipe of the year! Let’s just jump right into it.

Ingredients:

  • 10oz chicken sausage links (I bought pre cooked, italian seasoned)

    ** option to use vegan sausage links**

  • 6 C vegetable broth

  • 3 1/2 C red potatoes

  • 4 C kale

  • 3/4 C white onion

  • 1 tbs garlic

  • 3/4 C carrots

  • 1 tsp italian seasoning blend

  • 1 tsp chili flakes

  • salt / pepper to taste

Directions:

  1. Start by cutting your sausage of choice into small rounds. If it is not cooked fully cook per directions on package until golden brown and fully cooked.

  2. Next, diced your carrots, potatoes and onions into small bite sized pieces (shown above) and mince your garlic add all four into the pot with the sausage and cook until they become slightly tender and the onions translucent.

  3. Once potatoes are slightly softened add 6 C broth as well as spices to your pot and bring to a boil.

  4. Once boiling turn heat down to medium heat and simmer for 15 minutes. Chop and add your kale the last 5 minutes of simmering. Then ENJOY!
