Sushi Bowl
Hello friends, it’s been a while!
I know a lot of you have seen this recipe (if you’re coming from my instagram) but I had to share it on my blog and it have a permanent place where you guys can simply look it up.
Sushi is 10000000% my favorite food but i also didn’t want to go through the struggle of rolling the sushi so I threw it all in a bowl and it’s just as delicious.
Ingredients:
Fried tofu:
1 block firm tofu (drained)
Corn starch (I didn’t measure)
Salt / pepper / garlic powder
Sushi rice:
2 c cooked white rice
1/4 c rice vinegar
1 Tbs coconut sugar
Veggies:
Carrot
Cucumber
Red bell pepper
Seaweed
Sauce:
Vegan mayo
Sriracha (to your liking)
Directions:
How it’s done (simplified):
1. Coat tofu in corn starch and spices. Fry tofu in a little bit of chosenfoods avocado oil until crispy on all sides.
2. Cook your rice and measure 2 cups. Mix your rice vinegar and coconut sugar in separate bowl then combine with rice.
3. Thinly chop your veggies (I used a peeler to get mine paper thin!)
4. Assemble your bowl and top with spicy mayo, seaweed and sesame seeds if desired.
