Kimchi Fried Rice

WOW hello friends,

It’s been a little while since I made a recipe. Life gets busy sometimes but ya girl is back with a new one.

This recipe has been a go-to for my boyfriend and I the past few weeks because 1: I’ve been obsessed with kimchi! (plus it’s really great for the gut! Hello probiotics!) and 2: it’s extremely EASY, SIMPLE and HEALTHY.

This recipe takes about 20 minutes to make and makes about 3-4 servings. Let’s do this thannnng.

Ingredients:

  • 3 C white long grain rice

  • 1 C spicy kimchi

  • 1 C broccoli

  • 1/2 C mushrooms

  • 1/3 C red onion

  • 1/2 C carrots

  • 1 inch ginger

  • 2 tbs coconut aminos OR soy sauce

  • 1 tbs avocado oil

    *optional: add a fried egg, fried tofu, cilantro etc…


Instructions:

  1. Start by cooking your rice (I use a rice maker so I do 1 C rice + 2 C water). Cook per directions of which ever cooking method you are using.

  2. While the rice cooks cut up your veggies. Start by dicing onions, borccoli, carrot and mushroom in bite size pieces. Next, mince up 1 inch of ginger or use a grater to grate ginger. Add all vegetables to a non stick skillet with a little bit of oil for cooking.

  3. Cook vegetables for 10 minutes on medium heat until soft.

  4. Once rice is done cooking add 3 C into the pot with the vegetables, also add 1 tbs avocado oil, coconut aminos as well as your kimchi.

  5. Cook on medium heat until everything is combined and golden.

  6. Serve with a fried egg, fried tofu or protein of choice. I like to add chili garlic sauce as well as sesame seeds for a crunch. +salt and pepper to taste. ENJOY!
